We were at a real bakery, where they prepare bread, pizza and biscuits and we learned to prepare one of the most ancient and noble biscuits of Italy: <em>Il Giglietto di Palestrina<\/em>.<\/p>\n<div>\n<p><!--more--><\/p>\n<h2>Prepare the Biscuits and tasting<\/h2>\n<p>Laughter is assured. Trying to prepare a biscuit in the shape of a lily is fun because the task seems easy but it is actually difficult and most attempts are made in vain. But if you succeed you will be so proud.<\/p>\n<p>The tasting of the biscuits strait from the oven is a special moment\u00a0when you feel you are part of the tradition of this are of land located east of Rome. And here in this small town, I assure you, you will leave a piece of your heart.<\/p>\n<p>The trip from Rome was pleasant on board the private bus that accompanied us from the hotel to\u00a0<strong>Castel San Pietro Romano<\/strong>, a small town that rests on the gentle slopes of Mount Ginestro, in the\u00a0<strong>Prenestini Mountains<\/strong>, in the area that everyone knows as the\u00a0<a href=\"https:\/\/www.whereelse.it\/rome-countryside-tours\/\"><strong>Roman Countryside<\/strong><\/a>.<\/p>\n<p>When we arrived, the sweet sun illuminated the landscape, framed by the privileged view of the terrace of this town. Ancient villages, woods and hills embellished the vision. It seemed impossible to think that, until a few hours before, the background noise was the traffic in Rome and yet in this small town we found a silence that was much appreciated.\u00a0The clean, crisp air made the most natural gesture in the world pleasant: breathing.<\/p>\n<p>Too bad we did not have more time\u00a0to dwell a little longer and admire the landscape\u2019s generous views. We came for another purpose. We had to measure up to a local Italian baker in a\u00a0<strong>real bakery<\/strong>. Great\u00a0<a href=\"https:\/\/www.whereelse.it\/tour\/cooking-class-shopping-tour-in-the-roman-countryside\/\">Cooking Class<\/a>!!!<\/p>\n<p>&nbsp;<\/p>\n<figure id=\"attachment_8737\" aria-describedby=\"caption-attachment-8737\" style=\"width: 640px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-8737 size-full\" title=\"Cooking Class\" src=\"https:\/\/www.whereelse.it\/wp-content\/uploads\/2019\/02\/cooking-class-biscotti-roma.jpg\" alt=\"cooking-class-biscotti-roma\" width=\"640\" height=\"610\" srcset=\"https:\/\/www.whereelse.it\/wp-content\/uploads\/2019\/02\/cooking-class-biscotti-roma.jpg 640w, https:\/\/www.whereelse.it\/wp-content\/uploads\/2019\/02\/cooking-class-biscotti-roma-768x732.jpg 768w, https:\/\/www.whereelse.it\/wp-content\/uploads\/2019\/02\/cooking-class-biscotti-roma-600x571.jpg 600w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><figcaption id=\"caption-attachment-8737\" class=\"wp-caption-text\">Cooking Class<\/figcaption><\/figure>\n<h2><strong>The cooking class to learn how to make\u00a0<\/strong><strong>biscuits<\/strong><strong>from the Roman countryside<\/strong><\/h2>\n<p>The small bakery appears adjacent to a small, stone-paved square, in a decidedly antique-looking, almost medieval-style environment. From the doorway a<strong>\u00a0friendly smiling lady<\/strong>\u00a0welcomes us into the kitchen with aprons in her hand.<\/p>\n<p>After the introductions, and a round of shared laughs, we\u00a0<strong>donned our aprons<\/strong>\u00a0and went inside the room where there was an oven ready for use in the middle of the room.<\/p>\n<h3>The Giglietto<\/h3>\n<p>The head baker immediately introduced us to the<strong>\u00a0story of the biscuit<\/strong>\u00a0that we were about to learn how to prepare. The biscuit is hand shaped to resemble a lily flower, hence the name\u00a0<strong><em>giglietto<\/em><\/strong>. It is a simple dessert prepared with three ingredients: eggs, flour and sugar. It\u2019s color is a pale yellow, and when the biscuit comes into contact with your palate, it reveals a surprisingly delicate crunchiness. The taste is particular &#8230; in my opinion exquisite.<\/p>\n<p>We learned that the\u00a0<strong><em>Giglietto di Palestrina<\/em><\/strong>\u00a0has made its way into the Ark of Taste created by\u00a0<strong>Slow Food<\/strong>, the international association dedicated to the protection of quality food products throughout the world.<\/p>\n<p>The history of the\u00a0<em>g<\/em><em>iglietto<\/em>\u00a0is very particular. The recipe originated in France, and was borrowed from the Court of Louis XIV by the cooks of the noble Barberini family of Palestrina in the late 1600\u2019s when exiled due to contrasts with the papacy. Upon returning to Italy, the biscuit was made in the shape of a bee, to depict the Barberini family symbol. However, the bee shape was not as successful as the original, so the cooks returned to the lily flower shape which was the symbol of the French royal family. From that day, the recipe was handed down from<strong>generation to generation<\/strong>.<\/p>\n<h3>Cooking Class<\/h3>\n<figure id=\"attachment_8738\" aria-describedby=\"caption-attachment-8738\" style=\"width: 770px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-8738 size-full\" title=\"cooking-class-giglietto\" src=\"https:\/\/www.whereelse.it\/wp-content\/uploads\/2019\/02\/cooking-class-giglietto.jpg\" alt=\"cooking-class-giglietto\" width=\"770\" height=\"512\" srcset=\"https:\/\/www.whereelse.it\/wp-content\/uploads\/2019\/02\/cooking-class-giglietto.jpg 770w, https:\/\/www.whereelse.it\/wp-content\/uploads\/2019\/02\/cooking-class-giglietto-768x510.jpg 768w, https:\/\/www.whereelse.it\/wp-content\/uploads\/2019\/02\/cooking-class-giglietto-600x398.jpg 600w\" sizes=\"(max-width: 770px) 100vw, 770px\" \/><figcaption id=\"caption-attachment-8738\" class=\"wp-caption-text\">Cooking Class Giglietto | Photo Credit festivaldelgiglietto.it<\/figcaption><\/figure>\n<p>After the history lesson, it was time to get our hand dirty. With skilled hands the baker gave the moist dough its traditional shape. Incredible: in just a brief moment, those three pieces of soft dough, were transformed to take on the elegant shape of the lily flower.<\/p>\n<p>We carefully observed the operation several times &#8230;. each time our friend baker proceeded more slowly to make us understand the movements. And then it was up to us.<\/p>\n<p>While watching it seemed easy &#8230;. but actually doing it was a challenge. My hands and those of the other guests try to imitate what the baker has donewith skill since she was seven years old. The first results were discouraging but the\u00a0<strong>laughter<\/strong>caused by these small &#8220;works&#8221;<strong>\u00a0created a fun and euphoric atmosphere<\/strong>.<\/p>\n<p>After trying many times,<strong>\u00a0I finally was able<\/strong>\u00a0to produce a couple of acceptable biscuits.<\/p>\n<p>Satisfied, we showed<strong>\u00a0our biscuits\u00a0<\/strong>to the head baker, who, although laughing, complimented us on our demonstrated ability &#8230; Her kind laughter, however, revealed the reality\u00a0 of the situation &#8230; our\u00a0<em>giglietti<\/em>\u00a0were not exactly the same as hers.<\/p>\n<p>But wait &#8230;. finally\u00a0<strong>a perfect\u00a0<em>giglietto<\/em>\u00a0was made from my hands<\/strong>. I was so proud!<\/p>\n<p>The head baker then decided it was<strong>\u00a0time to bake the biscuits<\/strong>.<\/p>\n<p>The trays with our biscuits were placed in the oven and then came out after a few minutes\u00a0<strong>well cooked and very inviting<\/strong>. Even the aroma was\u00a0delightful. It smelled good &#8230;<strong>\u00a0it smelled like something Italian and home made<\/strong>.<\/p>\n<p>The time came<strong>\u00a0to taste<\/strong>\u00a0what we had made. Everyone took a biscuit and at the same time a glass of\u00a0<strong>Frascati white wine<\/strong>\u00a0was offered. The combination was spot on and at that moment I seemed to taste the best cookie in the world.<\/p>\n<p>It was really worthwhile to participate in this\u00a0<strong>day in the Roman countryside<\/strong>. A few kilometers from Rome there is a beautiful world, made of love, friendliness, tradition and many good things.
